Fry’s Veggie Burgers with Sweet Potato Chips

I was so excited when I found orange-coloured sweet potatoes at the supermarket! They are really tasty, and look so pretty! Try them as ovenbaked chips, and serve with some delicious burgers.

Serves 2

For the chips
2 sweet potatoes, skinned and sliced into chunky chips
olive oil spray, or 3-4 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon dried chilles (to taste)
1 teaspoon paprika
salt and pepper

Preheat the oven to 200 degrees Celsius.
Prepare an oven tray with non-stick spray, and place your chunky sweet potato chips on it.
Coat lavishly with olive oil (spray or drizzle).
Then top with chillies, sugar, paprika and salt& pepper.
Place in the hot oven and bake for about 30 minutes (check to see when the potatoes are cooked with a fork).

For the burgers
2 hamburger buns
2 Fry’s Vegetarian Burger Patties
Lettuce
Tomato (I used some of my tomato chutney, it’s delicious on a burger!)
Gherkins
Cheese
Avocado, mashed with some lemon juice
Sauce/ other toppings of your choice

Prepare the burger patties according to the instructions on the packet.
Assemble the burgers with all your favourite toppings, and enjoy!
