Favourite roasted veggies

What is more comforting than your favourite vegetables, roasted in olive oil and fresh herbs, served on a plate of couscous?

Try to include loads of whole garlic cloves, at least one quartered lemon, as well as fresh whole fennel … other than that, just mix all your favourite vegetables together, top with fresh thyme, basil and rosemary and a good amount of olive oil, and roast to perfection (180degrees, about 45 minutes).
