French toast

If you are avoiding eggs and dairy, but you miss French toast, then this recipe is for you. Made using aquafaba (chickpea brine), it is quick, easy, and tastes surprisingly close to the original!

125ml aquafaba (brine from a can of chickpeas, preferably chilled overnight)
125ml plant milk
2 teaspoons castor sugar
1 teaspoon vanilla extract
4-5 slices of bread
ground cinnamon, to taste

Heat a non-stick pan to medium heat while preparing the bread. Make sure to use non-stick spray after each slice of bread, as this tends to stick!
In a bowl, whisk together aquafaba, milk, sugar, and vanilla until frothy.
Soak the bread for a few seconds, and fry in your non-stick pan, one or two slices at a time, until lightly browned.
Sprinkle with ground cinnamon while frying.
Serve warm with maple syryp, blueberries, or whatever you fancy!
